Manzetta D’Abruzzo is not simply meat: it is the authentic expression of our territory. This young cow with a golden coat grows on the slopes of the Abruzzo Apennines, in a pristine environment where pure air, animal welfare and balanced nutrition – tailor-made by our experts – define the uniqueness of every single cut.

The result? A meat with a bright pink color and elegant marbling. During cooking, those thin infiltrations of fat slowly melt, releasing a juiciness and softness that are a true homage to the palate

Why is Manzetta our “presentosa“?

For those who live in Abruzzo, the presentosa is not a simple jewel: it is an artefact that contains history, craftsmanship and deep connections. It was given as a symbol of value and belonging.

We found the same essence in our Manzetta:

  • craftsmanship: like a goldsmith chisels gold, we follow every phase with artisanal care, from the selection of the pastures to your table.
  • time and passion: our slow maturation, lasting at least 20 days in dedicated cells, is the time necessary to transform an excellent raw material into a tender, velvety and precious product.
  • bond with the Earth: Manzetta D’Abruzzo, breastfed by its mother for up to 6 months and weaned with local cereals, is the story of a transparent supply chain and people who believe in quality made with respect and authenticity.

In the April issue of Luxury Food & Beverage, the magazine dedicates an in-depth feature to Centro Carne, defining us as protagonists of an important “evolution of the short supply chain”.

The article analyzes our integrated, zero-mile production model, a process that begins with livestock farming and ends with distribution, blending respect for local traditions with a contemporary industrial vision. In a region like Abruzzo, where meat is a defining characteristic, we have chosen to operate as “meat tailors”: professionals who select and process the raw materials with artisanal care and meticulous attention to detail.

The editorial focuses on the “La Manzetta d’Abruzzo – Naturalmente Buona” project. The brand is celebrated for its ability to offer exceptionally tender and flavorful cuts, thanks to meticulous selection and rigorous respect for animal welfare.

As Professor Carlo Angelo Sgoifo Rossi (University of Milan) emphasized in a technical interview, the secret of our Manzetta lies in the ideal balance between the young age of the head and the right amount of fat, elements that guarantee tender, flavorful, and long-lasting meat.

This publication confirms our mission: to put meat back at the center of the table as an authentic expression of Italian culture, capable of combining transparency, innovation, and gastronomic passion.

This means a drastic reduction in transport, maximum animal welfare and total control over the product, from breeding to point of sale.
  • Back to our roots: the Società Agricola Centrocarne and the Manzetta d’Abruzzo project are proof of our deep bond with the land. We promote local and sustainable production that protects biodiversity and supports the economies of small villages in Abruzzo.
