The “Mai Sazi” Aged Liver Salamella is a traditional Abruzzese cured meat, made from selected Italian pork and a percentage of pork liver, following an ancient rural recipe. The salamella is stuffed into natural casing, hand-tied, and slowly aged for at least 30 days until it reaches the ideal dryness and aromatic complexity.
